Onion Cheese Toast

 1-cup chopped onion
1/4-cup bell pepper, minced
1-4oz. can mushrooms, minced
2-tsp. minced garlic
1/2-cup mayonnaise
1-cup N.Y. Extra Sharp Cheddar Cheese
1/3-cup parmesan cheese
2-tsp. Satan's Breath® Cajun Blend
1/2-tsp. Satan’s Breath® Jalapeño Garlic
 

   Put all the above in a mixing bowl, mix till the blend is even.  Put bread under broiler and toast till golden brown.
Remove from oven and spread toast with onion, cheese spread.  Put back in the oven and brown the front side.
   Idea no 2, take 2-10 oz. packs of fresh mushrooms, pop stems, mince and add to the above mixture.  Now spoon the onion, cheese mixture in the mushroom caps.  Put in a 350oF and bake until cheese melts.  Both ideas are great Hors D' Oeuvres for any party.  The toast is also good for any meal when you want to make a difference.

Hot Hushpuppy or Hoecake Bread

1½-cup Satan's Breath® Breader & Hushpuppy Mix
1-cup all-purpose flour
1-T. sugar
1-tsp. salt
1½-tsp. baking powder
1-tsp. Satan’s Breath® Jalapeño Garlic
1-cup fine chopped onion
 

Mix all the dry above together until it is evenly blended in a SS bowl
 

1½-cup buttermilk
1-egg
 

Beat egg and blend together with the buttermilk.
 

1½-T. shortening
 

Now put in the shortening in the flour and cut it in until it is evenly blended.
Now made a hole in the center of the dry mix and pour in the wet mixture.
Cut the flour in slowly so it does not lump up.  Make a thick batter that can be dropped from a spoon.  That way you can drop it into the deep fat-fryer for hushpuppies or put in a hoecake in the iron frying pan or on a grill.
Makes 12 to 15

Japapeno Cornbread

2 pounds hot ground bulk sausage
 

Cook, breaking into granules.  When done, drain and set aside
 

3 cups yellow corn meal
1/2 cup self-rising flour
1 softball size onion, chopped
1 large bell pepper, chopped
1/2 cup chopped jalapeño pepper, or to taste
2oz. jalapeño pepper juice
18oz. can Mexicorn
4 eggs
1/4 vegetable oil
1-1/2 tsp. baking powder
1-1/2 tsp. salt, or to taste
1 pound ex sharp cheddar cheese
1 rounded T. minced garlic
1/2 qt. buttermilk
2 tsp. Satan's Breath® Cajun Blend , or to taste
 

Preheat oven to 350oF.  Put all the above in a large mixing bowl.  Mix good until you have an even blend.  Now grease a 15”x10”x2” Pyrex dish and pour the batter in.  Bake approx. 1 hour until a tooth pick will come out of the bread clean.  Time could vary with different ovens. 

X Hot Cajun Hushpuppies

 1 cup yellow corn meal
2-cups Satan's Breath® Breader & Hushpuppy Mix
1-tsp salt (optional)
1-T. baking powder
1-baseball size onion, chopped
1/2-cup bell pepper, chopped fine
3/4-cup milk (I prefer buttermilk)
1-egg
2 qts. Crisco oil for frying hushpuppies.
 

Mix all the dry ingredients together.  When you have a good even Blend, add the egg and milk.  Mix all together until you have a moist mixture with no dry spots.  Now add oil to your frying pan and heat oil to 350ºF.  Drop in a heaping tablespoon at a time and fry until a golden brown.  I use a clip-on thermometer.  Take out and drain paper towels.
 

Excellent with fish or good hot Texas style chili.
